Italian Chicken Salad in Cos Lettuce



Italian Chicken Salad in Cos Lettuce (Serve 6)

Ingredients

: 1 Roasted Chicken, shredded
: 1 cup roasted red and yellow capsicum, drained, patted dry
and coarsely chopped
: ½ red onion, thin slices
: ½ cup fresh Italian parsley, chopped
: ½ cup slivered almonds, toasted
: 1 tablespoon drained capers
: 2 heads of cos lettuce leaves
: parmesan cheese, shaved with vegetable peeler

For Red Wine Vinaigrette

: ½ cup red wine vinegar
: ¼ cup lemon juice
: 2 teaspoons honey
: 2 teaspoons sea salt
: fresh ground black pepper
: 1 cup virgin olive oil

Method

: Toss chicken, roasted capsicum, red onion, parsley, roasted slivered almonds and caper in a large bowl with vinaigrette. Season the chicken salad with salt and pepper, to taste.

: Arrange cos lettuce cups on the plate. Spoon the chicken salad into the each cos lettuce cups. Drizzle more vinaigrette over the salads. Sprinkle with the parmesan cheese and serve.

: For the Vinaigrette, combine red wine vinegar, lemon juice, honey, salt and pepper into the blender. While the machine running, gradually blend in olive oil until incorporated. Season the vinaigrette to taste with more salt and pepper if desired.
